I love to cook, and Wes loves to eat! Well...so do I really. And in all truth, Wes is a great cook too. I've taken some pictures of some of our recent creations, but haven't blogged them yet. So here's a summary of things that turned out well of late.
Beet Borscht. We got some beets in our CSA box, and didn't know what to do with them. I was skeptical about this, but it was delicious! It was all Wes too. He pays attention to details...note the shredded green apple on top and sour cream.
Beef Stew. This is Aunt Diane's recipe, but of course I made it low fat by using an eye of round instead of a chuck roast. I made the chuck roast version for R&R when I was out there and it turned out much better. Also much better when in a rectangular baking dish or a roasting pan. But live and learn :).
Beer Can BBQ Chicken. *NOTE: Vegetarians should avert their eyes. It might be traumatic. Wes has been experimenting with BBQ a lot. These were his first whole chickens on the barbie, and they turned out great! We brought them to a Passover dinner we celebrated. They made us a bit late, but were a big hit!
Pumpkin Waffles. These were this morning's creation. I make the batter and Wes cooks them. He has the patience to make sure they don't burn or are too soggy. This was a great low fat recipe. Pumpkin always makes a good fat substitute. They were hearty and delicious.

And no....Wes didn't eat all those. We froze some for later ;)
